The Academy of the Italian cuisine reports that in average 6 of 10 Italian dishes that are served in the restaurants outside Italy have nothing common with the authentic except their names. According to the collected information, in 60% of the cases, the Italian cuisine abroad comes in incorrect and obviously unsuccessful shape and only in 40% it comes in "good interpretation". One of the members of the Italian cuisine academy has told what he got in Edinburgh instead of spaghetti "alle vongole". He said that spaghetti "alle vongole" is quite a simple dish. It consists only of macaroni, parsley, mollusks and a little bit of garlic. Instead of that he got a heap of pasta and vegetables spiced with ketchup.
The specialists think that the reason for such situation is that almost half of the cooks that work in Italian restaurants abroad - are not Italians and only 9% of them have finished cuisine schools or practice in Italy. According to the information of the Italian cuisine academy, the most of the "fake" dishes are in the restaurants of USA, Canada and Australia. Mostly conform to the receipts of the Italian cuisine are the restaurants in Russia and China. In the rating of "fakes" takes leadership pizza and after that come tiramisu and lasagna. |
